Ingredients -
1 chopped head of broccoli
1 tablespoon butter
½ very finely chopped onion
1 cup milk
¼ cup heavy cream (optional)
4 cups vegetable broth
1 cup Chardonnay or similar white wine
1 ½ tablespoons corn flour
¼ cup cold water
1 very finely chopped garlic clove
Handful of grated cheddar
Salt and black pepper, to taste
Preparation:
Sauté the garlic in the butter for 2 minutes in a big pot, then add the onion and sauté for 3 minutes.
Add the broccoli, white wine and vegetable broth.
Cover and cook for 10 minutes or until the broccoli is tender.
Add the milk and some salt and pepper to taste and simmer the soup for a few more minutes.
Dissolve the corn flour in the water, then pour it into the soup and stir well.
Add the cream and simmer for 5 minutes or until the soup is thick.
Divide the broccoli soup between 4 serving bowls and sprinkle the cheese over the top.

Since this broccoli soup contains Chardonnay, you can serve the remainder of the bottle with the soup.
