Ingredients -
½ cucumber, halved and cut into strips
2 tablespoons red wine vinegar
1 cup cubed feta
1 lb ripe tomatoes, in wedges
½ red onion, thinly sliced
1 teaspoon dried oregano
10 pitted Kalamata olives
3 tablespoons olive oil
Pinch of salt
Pinch of black pepper
Preparation:
Whisk the oregano, vinegar, salt and pepper together, and then drizzle in the olive oil.
Keep whisking until the dressing emulsifies.
Combine the cucumber, feta, tomatoes, onion, and olives in a bowl, then drizzle in some of the vinaigrette.
Mix well and add more vinaigrette.
Serve immediately.

Acidic foods are best served with wines that have acidic undertones, such as Pinot Gris. This wine is also good with lemon-based sauces.
