How to Make Pork Cutlets with Lime Aioli

Make sure all the ingredients are at room temperature before you begin, for the best results. If you make the aioli first, you can chill it until you are ready to serve this dish. Aioli is similar to mayonnaise but it is the Mediterranean equivalent. This garlicky sauce goes amazingly well with the pork and it really complements the flavor of the meat. Pork is a meat that a lot of people forget about when wondering what to make for dinner.

Beef and chicken are great but they are such common meats. Pork has its own unique flavor and texture and lots of cuts are comparatively cheap as well, so why not get some pork cutlets and make the following tasty pork recipe? Everyone is sure to be impressed by it.

If you do not want to make the three different parts (the pork, the couscous and the aioli) for this meal, you do not have to. You could just do the pork and aioli and serve them with fries if you prefer. Or forget the aioli if you are not keen on garlic or you are short of time, and use a blue cheese salad dressing instead. It will taste just as good. You never have to follow a recipe exactly as it is set. You can adapt most recipes. The exception to this rule of course is if you are making something like a cake when changing the fat and flour proportions could be disastrous!

Garlic Pork Cutlet with Zesty Citrus Aioli

Ingredients -

4 pork cutlets with bone handle
1 lb couscous
1 tomato
1 tablespoon lime juice
Olive oil
2 tablespoons butter
1 egg
2 cloves garlic, crushed
Salt and black pepper, as needed
Fresh parsley, for garnish

Preparation:

First make the aioli. Separate the egg yolk from the white. Put the yolk in a bowl and whisk until frothy. Pour in some olive oil very slowly, whisking all the time, until the mixture starts to thicken. Add the crushed garlic and the lime juice. Whisk until it is syrupy and has the texture of yogurt. Add some salt and freshly ground black pepper to taste.

Clean the cutlets so the naked bone is visible. Add salt and pepper and char-grill on a stovetop grill pan or on a metal grid over hot coals until ready. This should take 4 or 5 minutes each side.

Put the couscous in a mixing bowl with a ripe, finely chopped tomato. Add a little salt. Pour boiling water over and stir until the mixture thickens. Let it rest for 5 minutes. Make patties from the couscous mixture and pan fry them in butter until golden.

To serve, arrange couscous on each plate. Top it with a pork cutlet and add a generous dollop of aioli on top of each cutlet. Scatter parsley around the plate to garnish.

Try a Chardonnay with this pork cutlet recipe. If you prefer something a bit crisper, you can go for a Sauvignon Blanc instead. Chardonnays are fruitier and more rounded whereas Sauvignon Blanc is a bit drier in flavor, so choose whichever of those appeals to your senses the most.
