Grilled Stuffed Chicken Recipes with a Stewed Vegetable Garnish

Chicken is a great ingredient to work with. It is inexpensive, versatile, and juicy as long as you cook it right! The following recipe uses an herby cheese stuffing which adds even more succulence to the chicken breast. The chicken is also marinated in maple syrup and lemon juice so it is full of flavor. The stewed vegetable garnish is tasty as well and you can use any vegetables you like in this, or follow our suggestions. Why not add some Mexican vegetables like corn or beans? You can add these near the end of the cooking time. Use canned ones that are cooked and make sure you drain off all the liquid first.

Stuffed Chicken with Tasty Stewed Vegetables

Ingredients -

For the Stuffed Chicken:

4 skinless, boneless chicken breasts
5 oz goat cheese
3 tablespoons fresh thyme, chopped
3 tablespoons fresh oregano, chopped
Juice of 1 lemon
5 teaspoons maple syrup
Olive oil for brushing
Salt and pepper to taste
Fresh parsley or cilantro, to garnish

For the Stewed Vegetables:

2 potatoes
2 onions
1 celery heart
1 oz green beans
1 zucchini
2 large ripe tomatoes
2 cloves garlic
1 tablespoon fresh parsley
1 twig of sage
2 tablespoons vinegar
2 tablespoons butter

Preparation:

Cut a pocket into the middle of each breast and set aside. Mix the cheese, herbs, and half the maple syrup in a small bowl. Stuff this mixture into the chicken breasts. Do not overstuff them. Put the stuffed chicken in a ceramic dish and pour the rest of the maple syrup over. Add the lemon juice. Turn the chicken breasts and make sure they are well coated with the lemon juice and maple syrup. Refrigerate for 30 minutes while you prepare the garnish.

To make the garnish, wash all the vegetables, finely chop them, and keep them separate. In a saucepan place the butter and onions. Fry for 1 minute. Add the carrots and beans. Cook 5 minutes. Add the potatoes, zucchini, and celery. Add the peeled, seeded tomatoes and keep cooking over a low heat. If the mixture gets too dry, add a cup of broth. When the vegetables are cooked, add the herbs and vinegar. Keep cooking until all the liquid has evaporated.

Preheat the grill to a medium high heat.

Take the chicken breasts out of the refrigerator and pat them dry. Oil the grill and cook the chicken for 10 minutes. If there are any flare ups, use a spray bottle of water on them. Flip the chicken. Turn the heat down to medium. Close the lid and cook for 5 or 10 minutes more until they are cooked through.

Serve the chicken on a plate with a good helping of the stewed vegetable mixture. Garnish the chicken with the fresh parsley or cilantro.
