White Chocolate and Strawberry Sundaes

This simple yet delicious recipe is based on white chocolate ice cream and a delicious homemade strawberry syrup. This is a nice recipe to make if you have some strawberries which are slightly overripe, because you can use the overripe ones to make the syrup and reserve the perfectly ripe ones for the garnish. Feel free to swap the white chocolate ice cream for vanilla ice cream or another favorite flavor.

A sundae is a combination of ice cream with other ingredients and you can create your own ice cream sundae recipes by using ice cream (or even sorbet) as well as nuts, fruit, marshmallows, ice cream syrup, chocolate candies or anything else you can think of. A sundae is a great way of cooling down on a hot summer day and sundae recipes are really straightforward to put together.

The following recipe calls for ice cream, whipped cream, strawberries, sugar, water, and fresh mint, so you might already have half of those ingredients to hand. If not, they are all easy to get. Remember you can use any flavor of ice cream you like for this easy ice cream sundae recipe.

Strawberry Sundae with White Chocolate Ice Cream

Ingredients -

4 scoops white chocolate flavor ice cream
1 cup whipped topping or whipped cream
4 fresh sliced strawberries
4 fresh mint sprigs

For the Strawberry Syrup:

1 lb hulled strawberries
½ cup white sugar
½ cup water

Preparation:

Combine the strawberries with the white sugar and water in a pan.

Bring the mixture to a boil over a high heat.

Reduce it to a simmer and cook the mixture over a moderate heat for 20 minutes or until the berries break down and the syrup is thick.

Strain this mixture and return it to the pan.

Reduce it over a medium heat for 10 minutes or until it is thick enough to coat the back of a spoon.

Chill the syrup until required.

Divide half the strawberry syrup between 4 serving glasses.

Top with a scoop of white chocolate ice cream and the remaining strawberry syrup.

Finish with the whipped topping and garnish with the sliced strawberries and fresh mint.
